Manchego potatoes:
1 kg potatoes
250 g manchego (grated)
2 dl cream
2 tsp salt
Black pepper

Manchego potatoes paired with mint oil and roasted garlic

  1. Peel the potatoes, slice with a mandolin or knife.
  2. Saute the slices in small batches in butter and olive oil, and in a casserole dish create alternate layers of sauteed potato slices and grated manchego.
  3. Season with salt, pepper and rosemary between each layer.
  4. Finally, add the cream and the rest of the grated manchego as the final layer.
  5. Bake in the oven at 200°C for around 45 minutes.
