Manchego potatoes paired with mint oil and roasted garlic
- Peel the potatoes, slice with a mandolin or knife.
- Saute the slices in small batches in butter and olive oil, and in a casserole dish create alternate layers of sauteed potato slices and grated manchego.
- Season with salt, pepper and rosemary between each layer.
- Finally, add the cream and the rest of the grated manchego as the final layer.
- Bake in the oven at 200°C for around 45 minutes.
