Le Marcaire is a semi-soft, full-fat red Brie cheese ripened from within and from the surface. It is a soft cheese with red and white mould-covered rind. It is a strong-scented cheese, robust and aromatic. Enjoy it just as it is, moderately ripe and at room temperature.
