This is a soft, full-fat mould rind cheese made from pasteurized goat’s milk. It is a mild, pleasant cheese that is delicious in salads with a dark balsamic vinegar and liquid honey dressing. It is also wonderful fried, in grilled sandwiches or on a steak. Chicken breast fillets with a warm goat cheese filling are also a delightful surprise.
