Originally a blue cheese, camembert did not obtain its current colour until as late as 1910! Camembert is a creamy, soft-ripened white cheese in which the whey is not pressed; rather, the cheese is left to set naturally before being turned and salted on both sides. The maturation phase lasts for several weeks. Enjoy this cheese in the same way as a Brie. Charles VII originates from the Normandie region.
